Cheap Ass Curry Night!

Miss match, Cheap but delicious! Food can be expensive! Don’t get me wrong I’ve worked in some expensive restaurants! But price doesn’t always mean flavour!!! This recipe will prove it to anyone that tries it, I promise you that 💯
Simple Fish Curry

Ingredients
1 tsp fenugreek seeds
1 tsp dried dill
1 tbs oil
1 tsp fennel seeds
3 bay leaves
1/2 tsp ginger powder
1 tbs curry powder
1 tsp turmeric
1 tbs cumin
1 tsp ground coriander
4 cloves garlic
1 brown onion
400ml light coconut cream
2 frozen Basa fillets
2 cups frozen veg
1 cup wholemeal couscous
salt,pepper and fresh coriander to taste
Method
1. Preheat an oven to 180 degrees C. Take two Basa fillets season heavily and cover with fenugreek seeds and dill. Wrap in tin foil, place on a baking tray and place in the oven for 30 minutes.
2. Meanwhile, finely chop onion and garlic, and oil to a pan and put on a medium heat. Add the onion and garlic, fennel seeds, ginger powder, curry powder, turmeric, cumin and ground coriander. Allow the onions and garlic to sweat. Mix well seasoning as you go. This will also gently toast the spices and form a paste with liquid released from the onions.
3. Next add coconut cream and bay leaves to the mix, mix well and turn the heat up. Once you find the cream is gently bubbling add in the frozen veg and allow to heat through and leave to simmer. Remove Basa fillets from the oven, roughly break up and add to the curry, continuing to simmer.
4. Pour 1 cup (200g) of couscous in a bowl. Then pour 1 1/3 cup (300ml) of boiling water into the bowl, stir, season, cover and allow to stand for 6 minutes. Remove the cover and fluff with a fork to separate the grains.
'I used coucous as it was just in my cupboard, basmati rice will also go well'
5. Serve up and sprinkle with fresh coriander!
