Chorizo Stew?

One of the simplest yet! fast delicious and not a lot of effort needed! Invented when I didn't have a lot to play with and could not really be bothered. It turned out to be excellent.
Chorizo Stew

Ingredients
3 chorizo sausages (raw)
1 brown onion
1 carrot
2 cups of spinach
½ red pepper
2 cloves of garlic
1 cup of water
½ tsp cajun spice
½ tsp chilli flakes
salt and pepper to taste
2 tbs balsamic vinegar
1 tbs oil
Method
Prep: Slice onion, carrot, pepper and garlic, and put to one side. Cut sausages into bite size pieces.
Add oil to a hot pan and add chorizo, onion and carrot. Cook on a high heat to brown off onion and seal meat, adding garlic after about 2 minutes.
Once onions have browned and chorizo is sealed and browning add 1 cup of water. Cajun spice, chilli flakes, balsamic vinegar and red pepper. Season with salt and pepper and allow to reduce by half.
After 5 minutes or so add spinach and let it wilt. This should only take 1 to 2 minutes.
Serve in a bowl and enjoy.
