No Stress Stir Fry

Ingredients
1 tsp coconut oil
1 small brown onion - diced
1 carrot - grated
1/2 cup of red cabbage - roughly chopped
1/2 green capsicum - sliced
1 cup brocolini - cut in half
3 cloves of garlic - minced / crushed with garlic crusher
200g prawns - cooked and peeled
1/2 tsp Chinese 5 spice
1 tsp Cayen pepper
1 tsp poppy seeds
100ml soy sauce
2 nests of stick rice noodles
pinch of salt
2L boiling water
Method
1. Prep all veg as instructed above.
2. Place prawns in a bowl and add minced garlic and a pinch of salt. Mix thoroughly.
3. Boil 2L of water and allow to simmer.
4. Heat a large pan / wok and add coconut oil, allow to melt and heat up
5. To the now hot pan add, onion, cabbage, carrot, Chinese 5 spice, Cayen spice. Mix well and allow to cook till golden.
6. Add garlic prawns to the mix along with poppy seeds, green capsicum and broccolini. Mix well again.
At this point drop the stick noodles into the hot water, stir and allow them to soften, this shouldn't take longer then a few minutes.
7. Add soy sauce to the stir fry, followed by the noodles. If the soy is added too early the mix can go too dry to coat the noodles. If so, don't add more soy sauce, add a dash of water instead. Adding more soy will make the dish very salty and unpleasant.
