Bayside Brisket

This brisket dish and tangy BBQ sauce is a quick prep but a long cooking process. Patience is key, the longer the cooking time the better, just trust in the process. The outcome is sure to impress friends and family at any gathering!

Slow cooked oven brisket

Ingredients

2.5 - 3 Kg Beef Brisket

1 tsp oil

4 tsp Cayenne pepper

6 tsp dried rosemary

2 tsp smoked paprika

4 tsp cinnamon

200ml maple syrup

1 large onion

1 bulb of garlic

1 carrot

3 cups water

salt and pepper

18-24 bread rolls/flat breads

BBQ sauce

2 tsp minced garlic

1 tsp oil

1 tin diced tomatoes

1/4 cup apple cider vinegar

2 heap tsp dijon mustard

1/4 cup maple syrup

1 tsp smoked paprika

3 tsp dark soy

salt to taste

Method

Preheat and oven to 150C. Heat 1 tbsp oil in a large, deep roasting tin (one that can go on the hob) or in your largest flameproof casserole dish. Season the beef well and sear in the tin until nicely browned all over. Lift out and put on a plate or board. Cut the onion and garlic bulb in half and put in the same tin along with a roughly chopped carrot, let the onion and garlic brown off and begin to caramelize.

While you are waiting for the caramelization, mix together; dried rosemary, cayenne pepper, smoked paprika, cinnamon and maple syrup and salt. Spread half of the mix over one side of the brisket. Place the brisket back into the baking tray. Pour 3 cups of water into the tray, cover with tin foil or another tray and place in the oven and bake for at least 6 hrs, turning once or twice during cooking, until really tender. (I left my brisket in the oven over night for 14 hours, turning the temp down to 120C to get it extra tender!)

For the BBQ sauce; heat 1 tsp of oil in a sauce pan. Add garlic and lightly fry. Add remaining of the ingredients and stir well. Allow to simmer for 10 minutes. Let the sauce cool and then blend well to create a smooth sauce.

When the brisket is tender and ready to serve, use two folks to pull apart the brisket. Serve in a bread roll or flat bread with a spoon full of BBQ sauce!
