Lime and pepper chicken

Lime and black pepper chicken

Ingredients (serves 2)

1 Chicken breast

1 Lime

2 tsp black pepper

1 tsp chilli flakes

4 tbs olive oil

pinch of salt

½ cup sweet potato (diced)

6 broccolini stems

½ cup sugar snap peas

1 lemon

1 cup couscous

1.5 cups water

1 Lemon

Method

  1. Slice chicken and place in a container. Mix zest and juice of 1 lime, 2 tsp of black pepper and 1 tsp of chilli flakes with olive oil and cover chicken. Refrigerate for 2 hours or overnight.

  2. Dice sweet potato and place on a baking tray. Drizzle with olive oil and a pinch of salt. Bake for 15 minutes on 180 degrees C

  3. Heat a pan and place the chicken strips in carefully one at a time. Cook on both sides for 3 to 4 minutes. If the chicken is cut quite thick you may need to put them in the oven for a few minutes to finish off cooking.

  4. Pour 1 cup of couscous into a container or pan. Zest 1 lemon into the couscous and mix. Pour 1.5 cups of boiling water over the couscous, stir and cover until ready to serve.

  5. Fill a pan with water and bring to the boil. Drop in your broccolini and sugar snap peas and blanch them for around 2 minutes. If the water starts to turn green take them out.

  6. To serve place couscous on the plate then arrange chicken and veg on top. Scatter the sweet potato over the top and dig in.
