Chicken breast! One of the most versatile meats available. However keeping it simple is sometimes for the best.
Cajun Chicken Breast with Salad

This recipe is very simple and very tasty!
Preheat the oven to 175 degrees. Mix together 4 Table spoons of Cajun spice, 1 teaspoon of salt, 1 teaspoon of black pepper. Drizzle a little oil over two chicken breasts before rubbing in the spice mix. Place the chicken breasts on a sheet of tin foil and wrap them up before placing in a baking tray and pop it in the oven. They will take around 35 to 40 minutes to cook.
In the meantime chop us a few cherry tomatoes, a red onion and mix together with rocket leaves, olives and balsamic vinegar.
