Why Waste?

Whether its time, money or food; I am not one to waste it. I hate looking in the fridge and seeing plenty of decent food that is near to going off. My normal solution is throwing it in with pastas and stir-frys. However with winter upon us and the cold weather creeping in I decided to make a delicious soup with nothing but random things I had lying around.

So what went in it then? well...
Ingredients:
8 Carrots (Chopped)
1 Red onion (Sliced)
3 Garlic cloves
1/2 Bag of old roquette
1/2 Bunch of coriander
2 Chillies
1 Tin of coconut milk
4 Pints of Water
Season with salt and pepper to taste.
Method:
-Fry off onion and garlic.
-Add all remaining ingredients and boil and simmer until carrots are fully cooked and very soft.
-Use a hand blender to make a smooth soup, if you don't have a hand blender, allow the soup to cool and blend in a regular blender.
The soup turned out great! The only recomendation I have is, maybe one chilli is enough. Unless you like spice like I do this may be a tad too hot for most.
