Now I know the feeling, trying your best to eat chicken and rice and the same struggle occurs of bland meals over and over. Well as a fan of chicken I don't mind it, but that may be down to jazzing it up a little.
This next dish isn't anything out of the ordinary but works well and ticks the healthy diet boxes.
Harissa Chicken

The dish is based on chicken for the protein component and regular long grain rice for the carbohydrates. The chicken was roasted for 20 minute at 200 degrees C after being rubbed in harissa, which is a paste made from chillies and garlic. The rice was boiled for around 15 minutes; here I added turmeric and corriander to go along with the north African theme. The salad that you see is simply lambs lettuce, red onion sliced very thinly and red peppers, with the veins taken out and cut in a julienne style then soaked in ice water to make them curl. This part can be a little tricky and takes a decent amount of knife skill, so if you aren't confident or do not have the time use regular sliced or diced pepper, to add a little sweetness. I served the dish with a lime cheek which i dressed my salad with to accent the spices, lemon would also be a nice choice but I had lime to hand.
