Today was carb up day meaning, I will intake a larger amount of carbohydrates today than other days in the week. This however doesn't mean that I will drop my regular amount of protein intake or have carbs that will have no great effect on my body, like simple sugars. This dish is very simple, very clean and very quick to prepare, whilst also being delicious!
Autumn Inspired Tagliatelle

For this dish I used gluten free tagliatelle, now I am not gluten intolerant but I don't eat a great deal of wheat at home. I am not a gluten free preacher and I do eat gluten when I eat out. This was a personal choice and any pasta would be fine, however tagliatelle seems to fit this dish well.
As it is in high season sweet potato and butternut squash were a perfect choice to roughly chop and steam for around 15 minutes while the pasta is also cooking.
Adding to a pan with a dash of olive oil I added the butternut squash and sweet potato, sliced grilled chicken (to keep up my protein intake), and wild roquette leaves to add a nice peppery hint. I then added the pasta a spoon full of basil pesto and tossed to mix all the goodness together. I plated before sprinkling over a few pine nuts which are essential minerals, vitamins and "heart friendly" mono-unsaturated fatty acids that help benefit in reducing cholesterol levels in the blood. I then gave a light covering of dukkah spice mix to give a little spicy kick to the dish!
